1 cup. quick-cooking oats, uncooked
¾ c. milk; ½ c. raisins, optional
1 ¼ c all-purpose flour
2 t. baking powder
½ t. salt; ½ t. cinnamon
1 egg
½ c. brown sugar, packed; ¼ c. oil
1-2 apples, peeled, cored, and chopped
In a small bowl, combine oats, and milk; set asideSoak raisins in a little hot water to “plump” them; drain
Combine in a medium bowl flour, baking powder, salt, and cinnamon; mix well. Beat egg, brown sugar and oil until blended. Add egg mixture to dry ingredients; stir until well blended. Stir in oat mixture, apples and raisins. Stir together until blended. Grease and fill muffin tins ¾ full. Bake at 400 degrees for 15 to 20 minutes.
Brown Sugar and Cinnamon Butter:
1 stick of butter, softened
4 t. brown sugar packed
¼ t. cinnamon;
1/8 t. nutmeg
In a small bowl, beat all ingredients together until fluffy. |
