Cheese Stuffed Mushrooms

24 medium mushrooms
¼ c. chopped green onions
1 clove garlic, minced
2 T. olive oil, divided
Salt and pepper to taste
¼ c. cream cheese, softened
½ c. garlic cheddar cheese grated
½ c. dry breadcrumbs
2T. grated Parmesan cheese
Remove stems from mushrooms. Chop enough stems to make 1 cup.
Using 1 T. oil in large skillet, cook stems, onion, garlic, and add salt and pepper over medium-high heat 2-3 minutes.
Remove from heat; stir in cream cheese, garlic cheese, and breadcrumbs. Spoon mixture into caps, sprinkle with Parmesan cheese, and drizzle with 1 T. oil.
Place on baking pan; bake at 425 degrees 15 minutes until heated through. Makes 24 appetizers.
